Crispy Garlic Lentils

I love lentils. Packed full of protein and fiber, these little legumes are tough to beat in terms of their nutritional value. Usually, I enjoy them in a soup or curry, but these crispy lentils are an addicting snack! They’re perfect on salads, soups, or straight out of the pan.

Crispy Garlic Lentils
Prep Time: 10 mins
Cook Time: 1 hour
Yield: 4 servings

Ingredients

  • 1 cup brown lentils
  • 4 cups water
  • 2 tsp olive oil
  • ½ tsp fine sea salt
  • ½ tsp garlic powder

Directions

  1. Rinse lentils and add to a pot with 4 cups water. Bring water to a boil, then reduce to a simmer. Cover with lid and cook for 20-30 minutes until just tender. Meanwhile, preheat oven to 400°F.
  2. Drain and spread onto a lined baking sheet.
  3. Drizzle with olive oil and sprinkle with sea salt and garlic powder. Toss to evenly coat all lentils.
  4. Bake lentils for 30-45 minutes, lightly tossing every 15 minutes.
  5. Enjoy as a snack, on salads, or in soup!
