Microwave Protein Mug Cake

Put a spin on your boring protein shakes with a mug cake instead! Using just 5 ingredients, you can whip this up in less than 5 minutes for a high-protein sweet treat or post workout snack. The cake is fluffy and the bottom is still runny! I like to flip mine out onto a plate so the runny batter acts like a nice “glaze” for the rest of the cake.

Here are a few things to keep in mind:

  1. Don’t overcook it! The sweet spot is when the cake has risen a substantial amount, but the bottom is still runny. Because the recipe uses whey protein, it’s really easy to go from a soft cake to a rubbery cake that tastes and feels like an old sponge.

  2. I’ve gotten the best results using a thick, ceramic mug. The cake cooks a bit slower than when using a thinner one, and it’s a little more forgiving with microwave time.

  3. I’m not sure how this works with other types of protein powder: I use MyProtein whey protein, and my favorite flavors to use are snickerdoodle, birthday cake, vanilla, and salted caramel.

Microwave Protein Mug Cake
Prep Time: 2 mins
Cook Time: 45 seconds
Yield: 1 mug cake

Ingredients

  • 35 g whey protein powder, any flavor (I use MyProtein)
  • 10 g all-purpose flour
  • 1 tsp baking powder
  • 1 egg white
  • 60 mL milk or water

Directions

  1. Use a balloon whisk the protein powder, flour, and baking powder together in a bowl.
  2. In a separate bowl, whisk together your egg white and milk/water.
  3. Make a well in the center of the dry mixture and add your wet mixture.
  4. Slowly incorporate the dry ingredients into the wet ingredients and whisk until fully combined and no lumps remain.
  5. Transfer batter to a thick, microwave safe mug and microwave for 45 seconds.
  6. Remove and enjoy!

Per mug cake: 200 calories: 13 g carbs, 3 g fat; 30 g protein
