Palak Paneer

What is palak paneer?

Palak paneer is a vegetarian, Indian curry made from spinach and various seasonings with cubes of paneer (Indian cheese). The crispy, rich cheese is enveloped in a creamy, flavorful, nutrient-packed curry.

Cook Time: 20 mins
Yield: 4 servings

Ingredients

  • 14 oz paneer, cubed
  • 1-pound baby spinach
  • 200 g canned crushed tomato
  • 1 medium white onion, diced
  • 1 green chili, diced
  • 4 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 1 cup water
  • 1 tsp salt, more to taste
  • 1 tsp sugar
  • 3 tsp oil, divided

Directions

  1. In a large skillet, heat 2 tsp oil over medium high heat. Add cubes of paneer and season with a pinch of salt. Pan sear until golden and remove from pan before wiping it clean.
  2. Add 1 tsp of oil to the pan and add diced onion and chili. Sauté until onions turn translucent for around 3-5 minutes before adding garlic and ginger, sautéing for 2 more minutes.
  3. Add crushed tomato, coriander, cumin, and garam masala and sauté for 2 minutes. Add water and spinach, stirring until wilted, and remove from heat.
  4. Transfer mixture to a blender and carefully purée. Add salt and sugar, adjusting to taste.
  5. Add blended sauce back to the pan over medium low heat and add paneer, cooking until everything is warmed through.
  6. Serve with basmati rice, jeera rice, and/or naan.
