Pressure Cooker Red Bean Paste

Dorayaki filled with smooth red bean paste

Use as a filling for items like steamed buns, swiss rolls, dorayaki, tangyuan, or as a topping on ice cream, shaved ice, or even oatmeal!

Pressure Cooker Red Bean Paste
Cook Time: 28 mins
Total Time: 45 mins
Yield: ~3 cups

Ingredients

  • 200 g dry adzuki beans,* not soaked
  • 480 g water
  • 100 g granulated sugar, maple syrup, or honey (or to taste)
  • 1 tsp salt (or to taste)

Directions

  1. Rinse beans and place in pressure cooker with water and cook on high pressure for 28 minutes.
  2. Wait 15 minutes before safely releasing pressure from cooker and opening lid. Transfer beans and liquid to a bowl.**
  3. Using a blender, food processor, or immersion blender, blend into a fine paste or leave chunks if you prefer.
  4. If using maple syrup or honey, simply stir in with salt and combine well. If using sugar combine bean paste, sugar, and salt in a saucepan over low heat, stirring constantly until the sugar just dissolves. ***

*You can also use mung beans or white beans to make different bean pastes.

**If you prefer a thicker paste, drain any water that was not soaked into the beans.

***Maple syrup or honey will create a slightly runnier paste than using sugar.
