Spring Strawberry Balsamic Salad

This simple and refreshing salad is a perfect side dish for any meal! The sweetness of the strawberries brings out the sweet tang of the balsamic vinaigrette, pairing perfectly with the creamy salty crumbled feta and crunchy walnuts.

Spring Strawberry Balsamic Salad
Prep Time: 5 mins
Yield: 4 servings

Ingredients

  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1 tbsp honey
  • Kosher salt and black pepper, to taste
  • 6 cups spring mix
  • 1 cup strawberries, leaves removed and halved or quartered
  • ½ cup crumbled feta
  • ¼ cup toasted walnuts, chopped

Directions

  1. In a bowl, add vinegar, olive oil, mustard, honey, salt, and pepper. Whisk quickly until emulsified, adding more honey or salt if needed.
  2. Add spring mix and strawberries to a large bowl and drizzle with dressing, tossing to combine. Serve with crumbled feta and walnuts.
