1-Ingredient Banana Nice Cream

COVID quarantine has certainly elicited a plethora of recipes using overripe bananas, but this quick, 1-ingredient recipe definitely beats the wait time for a hour-long banana bread baking in the oven.

What is nice cream?

Nice cream is essentially a less-guilty ice cream made from frozen, super ripe bananas. Thrown in a food processor and blended until creamy, the bananas transform into a smooth, creamy texture—just like ice cream! The natural sweetness from the bananas pairs well with just about any mix-ins, and you can customize flavors with vanilla extract, matcha powder, cocoa powder, or anything else you could imagine. My favorite flavor combination was inspired by the Ben and Jerry’s Chunky Monkey ice cream (courtesy of my sister getting this from our neighborhood shop).

You can enjoy this right away, or place it in the freezer for another 30 minutes to an hour to firm up and scoop out!

Nice Cream
Prep Time: 2 mins
Yield: 2 servings

Ingredients

  • 2 ripe bananas, peeled, chopped, and frozen solid (~250 g)
  • Optional: cocoa powder, matcha powder, vanilla extract, and toppings or mix-ins of choice

Directions

  1. Place bananas and any optional flavorings in a high-powered food processor and pulse to break down.
  2. Blend until smooth—it will reach a consistency similar to Dippin’ Dots first but continue to blend until it forms a creamy texture.
  3. Scoop into a bowl and serve immediately.

Per serving: 94 calories: 24.2 g carbs; 0.3 g fat; 1.2 g protein
