With just two or three ingredients, whip up these high-protein crepes and fill them with whatever you like!

Protein Crepes
Prep Time: 5 mins
Cook Time: 10 mins
Yield: 4-5 crepes

Ingredients
For crepes:

  • 2 egg whites
  • 25 g whey protein powder, any flavor
  • 2-4 tbsp water or almond milk

For filling:

  • whipped cream, ricotta, yogurt, peanut butter, etc.
  • fresh berries, sliced bananas, cheese, etc.
  • nuts, confectioners' sugar, fresh herbs, lemon zest, caramel or chocolate syrup, etc.

Directions

  1. Whisk egg whites with a fork or balloon whisk until foamy. Add protein powder and liquid (water or milk) to reach a thin, pourable consistency.
  2. Heat nonstick skillet over medium heat. Spray with cooking spray if needed and add ¼ of the batter to the pan. Swirl to coat the entire bottom. Cook for 2-3 minutes or until bubbles reach the surface and use a rubber spatula to release crepe from pan. Flip and cook on the other side for 1 minute.
  3. Repeat with the remaining batter and top with fillings of choice!

For entire recipe (using water): 138 calories: 3.5 g carbs; 2 g fat; 26.5 g protein
