These pancakes are great for macro-tight days, as they are almost completely made of protein! Use any flavor of whey protein powder and cook these up in a matter of minutes for a quick breakfast or post-workout meal.

Protein Pancakes
Prep Time: 5 mins
Cook Time: 15 mins
Yield: 2 servings

Ingredients

  • 2 large eggs
  • 50 g whey protein powder, any flavor
  • 1 tsp baking powder
  • 6 tbsp water or milk of choice

Directions

  1. Whisk together ingredients in a bowl.
  2. Heat a nonstick skillet or griddle over medium-low heat and spray with cooking spray if needed.
  3. Pour batter into skillet to preferred size. I usually use 2-3 tbsp each, and I can fit 2-3 into a large electric griddle.
  4. Flip pancake when bubbles rise to the surface and cook for 1-2 minutes or until browned.
  5. Top with fruit, syrup, yogurt, nuts, or anything you like!

Per serving (using water): 70 calories: 2 g carbs; 1.1 g fat; 13.2 g protein
