Teriyaki salmon with white rice and steamed vegetables

This tasty sweet and salty sauce adds so much dimension to a boring, baked salmon! With no added oil, this dish is very healthy and quick—perfect for a mid-week dinner or meal prep.

Baked Teriyaki Salmon

Yield: 4 servings

Ingredients

  • 4 4-oz salmon fillets
  • 120 g tamari or soy sauce
  • 40 g light brown sugar
  • 40 g maple syrup
  • 30 g rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tsp potato or corn starch
  • Optional: chopped green onions, toasted white sesame seeds

Directions

  1. Preheat oven to 450°F.
  2. In a bowl, whisk together tamari/soy sauce, brown sugar, maple syrup, rice vinegar, garlic and ginger.
  3. Place salmon fillets in a shallow dish or gallon bag. Remove half of the mixture and pour over fillets. Let marinate for up to 30 minutes in the refrigerator.
  4. Add starch to the remaining liquid and transfer to a small sauce pan. Over medium low heat, bring mixture to a simmer while constantly stirring. Remove from heat after 1-2 minutes or until thickened slightly. Set aside.
  5. Place salmon on a lined baking tray and bake for 8-10 minutes or until fish flakes with a fork.
  6. Brush thickened glaze over the fillets, garnish with green onions and white sesame seeds, and serve with rice and steamed vegetables!
