Ingredients
- 1-pound medium shrimp, tail removed
- 1 bunch Thai basil (approximately 1 cup)
- 2 limes, juiced
- 2 tbsp fish sauce
- 1 tbsp tamari/soy sauce
- 2 tsp coconut sugar
- 2 shallots, diced
- 3 cloves garlic, minced
- 1 green chili, diced (I use jalapeño)
- 3 slices ginger
- 1 tbsp cooking oil
Directions
- Combine lime juice, fish sauce, soy sauce, and coconut sugar in a bowl. Set aside.
- Heat oil in a large skillet over medium-high heat.
- Add shallots, garlic, ginger, and chili pepper, cooking until fragrant for 1-2 minutes before adding shrimp.
- Cook shrimp until opaque for 3-4 minutes. Pour in sauce mixture and add basil. Turn off the heat and continue to stir through until basil has wilted. Serve with rice or sweet potato and sautéed vegetables.
